Jon Broida, Japanese Knife Imports
Jonathan (Jon) Broida, the owner and master sharpener of Japanese Knife Imports in Beverly Hills, is a leading authority on Japanese knives. His journey began with a degree in Asian Studies from Colorado College before pursuing a career in the restaurant industry. After interning at fine dining restaurants in Los Angeles and working in renowned kitchens in Japan and Italy, including Michelin-rated establishments, Jonathan developed a deep respect for his tools that sparked a greater curiosity.
This passion led him through Japan’s legendary knife-making regions, where he studied the art of blacksmithing and sharpening under revered craftsmen in the heartlands of Sakai, Tsubame-Sanjo, Echizen, and beyond. Jonathan continues to train annually with Japan’s finest craftsmen, constantly refining his techniques and expanding his expertise.
Over time, he has become one of the most respected voices in the world of Japanese knives, trusted by chefs from acclaimed restaurants such as Nobu, The French Laundry, Pujol, Per Se, Spago, Somni, Hayato, Kato, Auburn, and more. His deep understanding of Japanese cutlery traditions makes him the perfect guide into this world steeped in centuries of craftsmanship.
