This seated, communal dinner offers an immersive exploration of Japanese fermentation through a thoughtfully curated menu led by Sho Suzuki of SUZU GROUP. Centered on fermented ingredients and seasonal flavors, the experience highlights how fermentation shapes taste, texture, and balance across a complete meal. The multi-course menu weaves together koji, miso, soy sauce, sakekasu, and amazake across vegetables, grains, and proteins, from sparkling soy sauce and onion-koji broths to miso-marinated vegetables, koji roast pork, and a miso-forward dessert, inviting guests to experience fermentation as culture expressed through food, process, and story.
Dine with us in an intimate, fermentation-driven dinner, available only during Hakko Expo & Market.
